Fermentation was carried out in 1000 kg containers. It is made with 100 destemmed grapes and fermentation is carried out by the native yeasts of the grapes. The cap is worked daily, prioritizing the infusion to the extraction by means of soft pigeages with the hands.
Alcoholic fermentation lasts 30 days and the wine is kept on skins for 10 days for post fermentation maceration. The finished wine is transferred directly to 225 L and 500 L used oak barrels, where malolactic fermentation takes place spontaneously. After 12 months of aging, the wine is racked and prepared for bottling. Unfiltered and unclarified wine
Tasting notes:
Perrachica 1912 bright garnet colour with medium robe. The nose is complex and develops over time in the glass Red fruit and toasted tobacco aromas predominate at first. With time in the glass, the black fruit gives way to hints of citrus and spice.
On the palate, the sandy tannin gives weight and structure. The wine is long and enveloping, the saline acidity leaves a sensation of lightness that invites you to drink again. A wine true to its origin and very complex
