Wine making:
They are cultivated using environmentally friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
When the Rico-Nuevo Jirón de Niebla grapes reach the winery, they are meticulously selected before being gently crushed. They then macerate and ferment spontaneously with native yeasts. Finally the wine ages in barrels and eggs for 10 months. It is bottled without filtering or clarifying and may contain sediments.
Rico-Nuevo Jirón de Niebla is made by a very individual project that seeks to showcase the marked character of this wine region that is getting more and more popular. Fresh minerality.
Tasting notes:
Rico-Nuevo Jirón de Niebla is a juicy wine with aromas of fresh red fruit, floral notes and spicy touches. On the palate it is direct, fruity and fresh. An easy to drink wine, that is long and has a marked mineral background.
Serving and Pairing:
Enjoy with stews, red meats, roasts as well as cured meats.
