Wine making:
Manual harvesting in 15 kg. boxes. Selection table and vatting in concrete tanks. Cold pre-fermentation for 3 days and fermentation at no more than 25ºC, with indigenous yeasts. Manual pressing. Malolactic fermentation in 500 and 225 L French oak barrels where it ages for 12 months.
The only addition is sulphur dioxide during vatting and before bottling.
Serving and Pairing:
Its good structure makes it a very versatile wine at the table: rice dishes, pasta, spicy food, red and white meats, fish with creamy sauces and cheeses.
Served between 14 ºC.
