Wine making:
They are cultivated using environmentally friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
The grapes are pressed, destemmed and the must undergoes cold debourbage for 24/48 hours. The must is then racked into a stainless steel tank where it ferments at a low temperature.
Before the alcoholic fermentation is completely finished, we bottle and cap the wine/must and it will be in bottle with its days for 18 months. After 18 months, we prepare the bottles for manual disgorgement The tirage is done with a wine that has been aged in used oak barrels since the first vintage. This barrel will be refilled each year, in a system that resembles the soleras of Jerez.
