Vineyards:
Bush old vines, in slate and quartz soils, between 950-1000 meters above sea level on the Galayo landscape in Sierra de Gredos.
Wine making:
Cooling of the grapes in chambers at 0ºand then alcoholic fermentation happens in concrete tanks with 30% of whole clusters at a temperature between 18-26 ºC. Once the fa has finished the first juice is raked to an inox tank where waits for 10 days until the final racking is done to old oak 225 Litres barrels and one 20hl foudre. On November 2019 the wine was racked out of barrels and filtered.
Tasting notes:
Cherry red colour, bright and clean. Fresh bouquet of red fruit paired with floral smells. The vibrant acidity characteristic of slate rock and the spiced notes makes the wine complex, fresh and long.
Serving and Pairing:
Enjoy with stews, red meats, roasts as well as cured meats.
Served at 12-14 ºC.
